Greek Lamb Salad
What you will need
- 2 Hellers lamb burgers
- 1 telegraph cucumber
- 15 pitted Kalamata olives sliced in half lengthways
- ½ red onion
- 1 punnet cherry tomatoes cut in half
- Marinated Feta:
- 200g block Feta
- 1 lemon zested
- ½ tsp dried oregano
- 2 glugs olive oil
- Dressing:
- ½ cup olive oil
- 3 tbsp red wine vinegar or balsamic vinegar
- 1 lemon juiced
- 1 tsp dried oregano
- sea salt and cracked pepper
- To Serve:
- 4-6 pita breads
- olive oil or garlic butter
Instructions
- To make the salad cut the cucumber in half lengthways and then slice into half-moons, slice the olives in half lengthways, red onion slice thinly and roughly chop, cherry tomatoes slice in half and then place altogether into a medium bowl. Toss together with a little sea salt and cracked pepper and set aside
- Sprinkle the lemon zest and dried oregano along with the olive oil onto a large dinner plate. Slice the Feta in half and then cut each half into quarters. Place onto the plate and turn over in the lemony oregano oil until well coated
- To make the dressing add all the ingredients to a glass jar and screw on the top. Shake the jar well until the dressing comes together
- Cook or fry the lamb burgers in a little oil on the bbq or a fry pan until thoroughly. Remove onto a board and chop the burger into bite size pieces
- To serve add the lamb burger pieces to the salad, and then drizzle with dressing. Gently toss the salad and place onto a serving dish or plates. Top with the slices of marinated feta
- Great served with hot fried garlic pita bread – butter both sides of a pita bread and fry in pan over medium heat. You can also just brush them with olive oil and fry in the pan. Omit these if you are Keto.
