What you will need
- Corn Salsa:
- ½ can corn kernels drained and rinsed or 2 fresh cobs kernels removed
- 5 sliced jalapenos roughly chopped
- 3 tomatoes core removed and then diced
- 1 handful fresh coriander leaves roughly chopped
- 1 lime zest and juice
- Creamy Guacamole:
- 1-2 Avocado
- 4 tbsp sour cream
- 1-2 lime juiced
- 4 Hellers NZ Lamb burgers
- 4-6 tortillas
- 3 iceberg leaves roughly chopped
Instructions
- Place all the ingredients for the corn salsa into a small bowl and toss together well. Season with a little sea salt and leave to infuse flavours
- Smash the avocado roughly in a small bowl with the lime juice, fold through the sour cream and season with sea salt to taste
- Panfry or bbq the lamb burgers till golden and thoroughly cooked. Slice into strips and set aside somewhere warm
- Spray each side of the tortillas with a little olive oil and pan fry over medium heat until they begin to puff up and turn golden
- To assemble spread guacamole in the middle of each tortilla, add the chopped ice burg lettuce, add several lamb burger slices, and then top with corn salsa and serve
- Serve with extra jalapenos on the table for those who like it hot!
