Bacon & Truffled Scrambled Eggs

INGREDIENTS
- 4 x rashers Hellers Streaky Bacon
- 2 tbsp FreshLife 4 Seed Mix
- 4 Eggs
- 2 tbsp Best Foods Truffle Mayonnaise
- 4 slices Dark Rye
- 1 tbsp unsalted butter
- Superb Herb Chives
- Salt and pepper to taste
- Put the seed mix in a dry fry pan over low heat. Stir continuously with a wooden spatula until fragrant and sesame seeds start to pop. This takes only about 2 minutes. Transfer immediately to a plate and set aside. Be careful not to burn the seeds.
- Break one of the eggs into a bowl, add the truffle mayonnaise and seasoning, and whisk well to combine thoroughly. Add the rest of the eggs and whisk again.
- Melt the butter in a fry pan over a low heat. Pour in eggs, letting the outside set, then slowly stir with a rubber spatula until eggs are silky, smooth and creamy. Be careful not to overcook.
- While the eggs are cooking, fry the bacon in a separate pan and toast the bread.
- Divide the scrambled eggs across the four slices of toast. Sprinkle with snipped chives and some toasted 4 Seed Mix. Serve with crispy bacon on the side.
