Cheesy Chili Loaded Dogs

A quick easy chili con carne rammed into a hotdog bun with our amazing loaded hot dogs…topped with cheese and baked till golden – soooo good!!

INGREDIENTS

  • Easy Chili Con Carne:
  • 2 tbsp olive oil
  • 1/2 large onion finely chopped
  • 700g beef mince
  • 1 tbsp tomato paste
  • 1 x 35g pack taco/nacho seasoning
  • 1 can chopped tomatoes
  • 1 can kidney beans [add extra can if you want to bulk out this recipe]
  • salt + pepper to taste
  • -------------------------
  • 2 x 4 pack Hellers Loaded Hotdogs - we used Philly Cheese
  • 8 hotdog buns
  • Cheddar cheese slices or grated cheese
  • To serve:
  • finely diced white onion
  • chopped chives

METHOD

  1. Preheat oven 200C fan bake
  2. To make the chili con carne start by sauteing the onions in the oil in a large fry pan over medium heat until soft. Add the mince and allow to brown off and break up - this should take 5 mins. Add the tomato paste and seasoning and allow to cook for a further 3 mins. Add chopped tomatoes and kidney beans and gently simmer for 10 mins. Adjust seasoning to taste and set aside
  3. This is an optional step but gives another layer of flavour. Sear and slightly blacken the hotdogs over a bbq grill -but you can also just use the hot dogs straight from the pack if you are time poor
  4. To assemble, cut all the buns lengthways along the top and place into a large baking dish. Butter the inside of each cut bun [optional but adds more flavour] add a big spoonful chili, then a hot dog and another spoonful of chili. Layer with cheese slices or sprinkle with grated cheese
  5. Bake in the oven for 10-15 mins until golden
  6. To serve sprinkle with onion and chives
  7. Goes well with a big crisp garden salad or a side of bacon and broccoli salad
