Jalapeno + Cheese Loaded Hotdogs with Queso + Fried Jalapenos

A Mexican feast stuffed into this glorious loaded dog….straight from the street eats food truck files!

INGREDIENTS

  • 1 pack Hellers Jalapeno + Cheese Loaded Hotdogs
  • 4 hotdog buns
  • Fried Jalapenos:
  • 1.5 cups plain flour
  • 1/2 tsp paprika
  • 1 tsp each salt, ground black pepper, garlic powder
  • 2 large eggs
  • 1 cup lager or fizzy water
  • 2 cups sliced and pat dry jalapeno slices
  • 300ml canola oil
  • ----------------------------------
  • Queso: - store bought or try making your own its very simple
  • 2 tbsp oil
  • 1/2 cup finely diced white onion
  • 340g can evaporated cream
  • 2 cups colby grated
  • 1 cup cheddar grated
  • 1/2 green capsicum finely diced [deseeded]
  • 6 jalapeno slices finely diced
  • 1/2 tsp each salt and ground black pepper

  • To serve: shredded iceberg lettuce, finely diced tomato, fresh coriander leaves, condiments

METHOD

  1. To make the fried jalapenos whisk the dry ingredients together in a medium bowl. Using a fork lightly break up the eggs in a small bowl and add to the dry ingredients then gently whisk in the beer. Make sure the jalapenos are patted dry with a tea towel. Heat the oil in a deep side fry pan or medium pot - test with a small amount of batter to check the temperature, it should bubble around the batter. Using small tongs dip the jalapenos into the batter and fry till golden all over. Remove from oil onto a paper towel keep aside some where warm
  2. To make the Queso fry the onions in the oil in a deep sided fry pan till tender. Add the evaporated milk and cheese and allow to melt over a medium-low heat stirring constantly so it doesn't stick. Add capsicum, jalapeno, paprika and seasonings and cook until it thickens 3-5 mins. Transfer to a serving bowl, it will thicken as it cools. It will develop a skin on top so place some baking paper over it until you are ready to serve it. Sprinkle with coriander and diced tomato to serve
  3. Heat BBQ and cook sausages until piping hot
  4. To assemble place shredded lettuce into a cut hotdog bun, top with sausage and a generous spoonful of queso. Top with fried jalapenos and sprinkle with diced tomato and coriander
