Pulled Pork Baked Potato with Smokey Cheddar Recipe

Ingredients
- 1 pack of Hellers Pulled Pork
- 4 large scrubbed potatoes
- 1½ cups of grated smoked cheddar
- 2 finely sliced spring onions
- A handful of chopped Italian parsley
- 120g of sour cream.
- In a hot oven bake the potatoes till tender and the skins are brown and crackly to touch. Once cool enough to handle but still hot, cut a lid out of the top and scoop out the cooked potato and transfer it to a bowl.
- Heat the pulled pork gently in the microwave till hot then fold through the sauce and add it to the cooked potato. Put a few spring onions, some chopped parsley and the half cup of smoked cheddar aside for later. Fold the rest of the spring onions, parsley and smoked cheddar through the cooked potato mix, season to taste.
- On the baking tray spoon the pulled pork-potato mixture back into the potato skins piling it up on the top. Sprinkle with the remaining smoked cheddar and pop them back in the oven for a further 5-10 mins till the cheese is golden. Finish with a dollop of sour cream and garnish with spring onions and parsley.
